The crystals begin to absorb moisture from the air immediately. The moisture is kept in the crystals inside the pouch and eventually will drip into bottom which can take a few days or even a week.

No, instead of evaporating into the air, the liquid will continue to absorb a small amount of moisture.
When should I empty my Easy-Fill System?
Empty the Easy-Fill System when the liquid reaches the full line. Simply open the lid and drain liquid into the toilet or sink. Remove the top to discard the used pack responsibly and replace. If you rinse the drain port regularly before refilling, it will help reduce the potential to clog.
